In a medium-sized skillet, brown the beyond beef. Use a wooden spoon to break up the meat into small chunks, like sausage. Add 1/4 salt and 1/4 pepper and cook for about 10 min.
Pre-heat oven to 350F.
While the meat is browning, crack the eggs into a medium/large bowl. Add in the cream, garlic, salt and pepper.
When the meat is done, add it to a greased 9.5 x 9.5" pan.
Sprinkle the cheese over the "sausage" then add in a handful of pickled jalapenos and pour the egg and cream mixture.
Make sure the cream mixture is incorporated into all nooks and crannies of the casserole. You might need to use your hands to make sure all spots are covered, but it doesn't have to be perfect.
Bake for 35 minutes.
Let the casserole cool, then cut into squares and garnish with sliced green onions. Enjoy!
