Pre-heat oven to 350F and grease a 9" springform cake pan
Add the dry ingredients to a medium-sized bowl and set aside
Crack the eggs in a large bowl and beat on medium speed with an hand mixer until tripled in size
Add in the olive oil and slowly add the dry ingredients into the egg mixture and beat on slow speed until fully mixed
Add in the diced persimmon and mix
Pour the batter into the greased pan and bake for 30 minutes until golden brown and a toothpick inserted in the middle, comes out clean
Let cool, then dust with powdered sugar and serve at room temp, with or without ice cream!
